Spinach Cheese Quiche Cups (low carb)

Ingredients
EggsFrozen spinachMozzarella cheeseBaking powderSaltPepper12-cup muffin tray
Directions
Warm oven to 350 degrees and spray muffin tray cups with non-stick spray. Thaw frozen spinach and drain off water. Blend eggs and baking powder in a medium bowl, then add spinach and shredded cheese, and salt/pepper to taste. Pour blend into each cup just short of the top, then bake for 25-30 minutes. Remove from muffin tray and allow to cool before storing. Two quiche cups = one serving.
