Stewed Tomatoes and Onions

Ingredients
1/2 cup (120 ml) chopped bell pepper1/4 cup (60 ml) celery, thinly sliced1 small onion, chopped2 cloves garlic, minced1 can petite diced tomatoes1 tbsp red wine vinegarDash dried basilGround black pepper to season
Directions
Coat nonstick skillet with cooking spray. Pre-Heat skillet over medium heat. Add bell pepper, celery onion and garlic. Saute for 5 minutes or until vegetables are tender. Add the tomatoes, vinegar, basil and black pepper. Bring to a boil. Cover, reduce heat and simmer for 15 minutes, stirring occasionally.
