Big and Fluffy Dairy Free Pancakes

Ingredients
1 cup flour2 tbsp sugar1 tbsp baking powder1/2 tsp salt1 large egg, beaten3/4 cup rice milk, enriched2 tbsp canola oil
Directions
1. In a bowl, combine the flour, sugar, baking powder and salt.

2. Combine eggs, milk and oil; add to dry ingredients and mix well.

3. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep warm.
