Chicken Pancit (Gluten, Dairy & Corn Free)

Ingredients
12 oz - Rice Noodles, Dry (find package w/NO corn starch)1 tbsp - Vegetable Oil3 cloves - Minced Garlic3 - Chicken Breast, bone and skin removed1/2 cup - Carrots, grated1/4 cup - Bragg Liquid Aminos1 tbsn - Lemon juice
Directions
1.Place the rice noodles in a large bowl, and cover with warm water. When soft, drain, and set aside.
2.Heat oil in a wok or large skillet over medium heat. Saute garlic until soft. Stir in chicken, carrots and Liquid Aminos. Toss in noodles, and cook until heated through, stirring constantly. Add lemon juice, stir and transfer pancit to a serving dish.
