1.5 Cups Whole Wheat Flour1.5 Cups Almond Meal (Ground Almonds)2 Cups Splenda (NOT sugar blend) 2 Tbsp Baking Powder1 Tspn Baking Soda2 Tspn Cinnamon1/2 Tspn Salt2/3 Cup Canola Oil3/4 Cup Unsweetened Soy Milk2 Tspns Vanilla Extract1 Cup diced Apples (2 small to medium bananas)
Directions
Preheat the oven to 350 degrees F.
In a large bowl, combine Flour, Sugar, Baking Powder, Baking Soda, and Salt. Stir to combine dry ingredients. In another medium bowl combine Oil, Milk, Vanilla, and Diced Apples. Add Wet ingredients to Dry ingredients and mix until combined.
Using teaspoon or small cookie scoop fill each mini muffin tray.
Bake 10-15 minutes rotating trays half way through. Or until tops are golden brown.
Serving Size: Makes 48 mini muffins
