Tilapia in Garlic White Wine Sauce

6 Tilapia Fillets (6 Sam's Club frozen Tilapia Fillets were figured for nutritionals) 1 T. Original Spike Seasoning OR a poultry seasoning like Montreal Chicken Seasoning or Paul Prudhomme's Chicken Magic 1/4 cup Olive Oil 2 Tbsp. Butter ½ cup Heavy Cream ¼ cup White Wine, Chardonnay 2 tsp. Minced Garlic OR Large Cloves Garlic, put through a garlic press 1 tsp. Dried Parsley OR 1 Tbsp. Fresh Parsley, chopped
In a large skillet, heat oil and butter together over medium high heat. Add pressed garlic, season tilapia with Spike seasoning and add to skillet. Brown on both side; remove fillets when done. Add wine to skillet, scraping bottom of skillet to loosen any drippings. Add heavy cream and mix with wine sauce. Cook sauce until reduced enough to coat the back of a spoon. Add parsley. Serve sauce over tilapia.
Note: Don't cook on too high of a heat or cream will curdle.
