2 zuccini squash1 yellow squash4 cloves of garlic, chopped1 onion or 1 cup1/2 c. chopped green pepper2 tbsp tomato paste1 cup of crushed or stewed tomotos (or 6 fresh tomatoes)basil in last minute of cookingsalt and pepper vegatable broth added as needed during simmer
saute onion and green pepper in olive oil until onion is translucent, add garlic cook 1 minute, add squash, salt and pepper to taste. Saute until squash is tender, add tomato paste coat vegetables, add tomatoes and begin to simmer, stirring and adding broth to keep it from drying out. During last minute of cooking add basil to taste.
