1 large sweet onion, chopped2 cloves of garlic, minced2 T olive oil1.5 baked sweet potatoes1 qt vegetable broth1 t saltFresh ground black pepper to tastePinch of nutmeg (optional)
Heat the olive oil in a pot, caramelize the onions and garlic, and add the salt and pepper. Pour about half of the broth into the pot to deglaze. Add the sweet potatoes in halves and mash. Blend with an immersion blender or in a blender until smooth. Add the remaining broth and the nutmeg.
