Baked Potato Skins

Ingredients
4 lg. Baking Potatoes, Baked3 Tbsp. Canola Oil1 Tbsp. Grated Reduced Fat Parmesan Cheese1/2 tsp. Salt1/4 tsp. Garlic Powder1/4 tsp. Paprika1/8 tsp. Pepper8 LightLife Smart Bacon Strips, Cooked & Crumbled1 1/2 C. Shredded 2% Cheddar Cheese1/2 C. Fat Free Sour Cream4 Green Onions, Sliced
Directions
1. Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use). Place potatoes skins on a greased baking sheet. Combine oil, Parmesan cheese, salt, garlic powder, paprika, & pepper; brush over both sides of skins. Bake at 475 degrees F for 7 min; turn. Bake until crisp, about 7 min. more. Sprinkle "bacon" & cheddar cheese inside skins. Bake 2 min. longer or until the cheese is melted. Top with sour cream & onions. Serve immediately.
