Beef Pasta with Ricotta

1/3 bell pepper, green1/4 tsp. dried oregano3 oz. of lean, ground sirloin1/3 cup nonfat ricotta cheese1 clove garlic1 medium fresh tomato1/3 tbsp. olive oil 1.5 oz. (dry, uncooked) pasta, thin spaghetti
1. Prepare pasta according to recipe provided; drain and set aside.
2. Chop bell pepper and tomato; mince garlic; set aside.
3. Heat oil in a nonstick skillet over medium heat. Sauté garlic, chopped tomato and bell pepper 2-3 minutes or until bell pepper is slightly softened.
4. Add ground beef and cook until browned, stirring occasionally.
5. Add cooked pasta along with oregano and ricotta. Cook for about 2-3 minutes more until heated through.
Makes 1 serving, easy to double for a dinner for two!
