Albondigas Soup

Ingredients
2 Tbl Olive Oil3/4 Yellow Onion, minced4.5 cloves Garlic, minced24 oz. Diced tomatoes1 Tbl Chili Powder1.25 Jalapeno, diced2 quarts Beef Stock1/4 Tbl Oregano, dried1/3 tsp Cayenne Pepper1/2 cup RiceSaltPepperMEATBALLS1 lb. Ground Beef1 lb. Ground Pork1/4 cup Zucchini, shredded1/4 cup Carrots, shredded1.5 cloves Garlic, minced1/4 cup Rice1 1/2 Tbl ParsleySaltPepper1/2 tsp Oregano, dried1 Egg1/3 Yellow Onion, minced
Directions
Saute onion and garlic in oil then puree tomatoes and add to onion mixture along with beef stock

Add chili powder, oregano, salt, pepper and jalapeno and bring to boil

To make meatballs, mix together all ingredients and form into 1" meatballs

Drop meatballs into boiling soup, cover and cook for 10 minutes, sprinkle in rice then cook and additional 20 minutes.
