1 lb 93% lean ground beef1 cup chopped celery1/2 cup chopped onion1 clove garlic, minced 1/4 tsp red pepper flakes1 cup minute rice, uncooked1 cup low sodium beef broth1 can black-eyed peas, rinsed
1. In large skillet, cook beef; drain. Add celery, onion, and garlic. Cook 5 min.
2. Meanwhile, in a small pot bring beef broth to a rolling boil. Add rice and stir. Remove from heat, cover and let sit for 5 minutes.
3. Add black-eyed peas and red pepper to meat mixture; mix well. Continue to cook until heated thru. Gently stir in cooked rice until combined. Serve warm.
