Lemon Orzo

Ingredients
1 box orzo pasta (approx. 14 oz)1 tbsp extra virgin olive oil2 lemons, zested1/4 cup parsleysalt and pepper to taste
Directions
Cook orzo in salted water according to package.
Drain well. Do not run under water.
Transfer to serving bowl, drizzle orzo with oil and season with salt & pepper.
Add lemon zest and parsley and toss.
