Chocolate Chip Banana Muffins

3 medium ripe bananas 1/3 cup unsweetened apple sauce 1 1/4 cups flour 3/4 tsp baking soda 1/4 tsp salt 1 Tbsp I can't believe it's not butter light, softened 1 Tbsp unsalted butter, softened3 Tbsp Splenda brown sugar blend2 large egg whites 1/2 tsp vanilla extract 2 Tbsp semi-sweet chocolate chips cooking spray
1. Preheat oven to 325 degrees. Spray a muffin pan lightly with cooking spray.
2. Mash bananas in a bowl and set aside. In a medium bowl, combine flour, baking soda and salt with a whisk. Set aside.
3. In the large bowl of an electric mixer, cream butter and sugar. Add egg whites, bananas, apple sauce and vanilla; beat at medium speed until thick. Scrape down sides of the bowl.
4. Add flour mixture to banana mixture and blend at a low speed just until combined. Fold in chocolate chips. Do not over mix.
5. Pour batter into prepared muffin pan; bake on the center rack for about 40 minutes, or until a toothpick inserted in the center comes out clean.
