ITALIAN SPINACH PIE

Ingredients
1 container non-fat Cottage cheese1 pkg. 10 oz frozen chopped spinach1 c. shredded mozzarella cheese4 beaten eggs1 jar (7 oz) roasted red peppers, chop1/3 c. parmesan cheese1 t. oregano
Directions
Thaw spinach and drain well.
Mix all ingredients together.
Pour in greased large pie plate or cake pan.
Bake 350 - - serves 8

    I love this recipe! Very easy to make, and delicious. I didn't add the roasted red peppers (didn't have on hand), but you can modify the recipe easily by adding onions, garlic, etc. Only problem -- how long to bake. I baked for about 45-50 minutes. - 5/16/11
