Non-dairy Lemon Doodles

Ingredients
2 sticks of Earth Balance Vegan Buttery Spread1 1/2 Cups Sugar2 Eggs1 tsp almond extract2 1/4 Cups Flour1 tsp baking soda1 tsp baking powder1/2 tsp salt1/2 Cup sugarZest from 3 lemons
Directions
Preheat oven to 350 degrees F. Mix the extra sugar and lemon zest in a separate bowl. Cream the "butter" and sugar. Add eggs and almond extract. Mix. Add dry ingredients. Mix. If it seems too sticky, add a little more flour. This dough will be more like chocolate chip dough and less like snicker doodle dough - meaning it is sticker. Drop the batter on the ungreased cookie sheets. Generously sprinkle the lemon sugar mixture. Bake for 8 to 10 minutes. Let cool on racks.
