Low Carb Blue Berry Muffins

2 cups Low Carb Baking Mix2 TBSP. Canola Oil2 Eggs1 Cup Water3 TSP Baking Powder1/4 cup Splenda1/2 teaspoon Vanilla1 Cup Fresh Blue Berries
Heat Oven to 350 degrees. Line Muffin Pan with liners or lightly spray with cooking spray.
In a mixing bowl combine dry ingredients. Make a well in center of dry ingredients and add the eggs, water, oil and vanilla. Mix together. Fold in the Blue berries. Use an Ice Cream Scoop to fill the muffin pan. One scoop per muffin.
Bake for 22-25 minutes until done.
