Ingredients
1 medium eggplant1 large zucchini1 large green pepper1 large onion1 tablspoon olive oil1 tablespoon garlic1 tablespoon mrs. dash4 seving of newmans marinara sacue2 cook shredded chicken4 oz feta cheese
Directions
1 preheat oven 45 F spray a large baking pan with
cooking spry
2 cut eggplant,zucchini, bell peper and onion into
strips. place vegetables and the oil in a big bag
and toss the veggies
untile coated add the mrs dash toss again
3 spread the veggies mixture evenly in pan. roast until
tender, about 20 min. remove from oven and lower
oven to 400 F
4 stire and marinara sacuce and garlic. top with shrdded chicken and cheese
5cover loosly with foil. bake 15-20 min
