Pinto/Great Northern Bean Soup

- one pound of dry pinto beans, and one pound of dry great northern beans, soaked overnight.- Two smoked turkey drumsticks, about two pounds - defrosted if you had them frozen.- Three pounds of yellow onions, peeled and diced- One pound of carrots, peeled and cut into rounds- Two pounds of sweet potatos, peeled and diced into small cubes.- One 12 oz can of tomato paste- Two Bay Leaves- Spices to suit.- four quarts of water
Put all ingrediants except the tomato paste in a large pot, bring to a boil, and the turn the heat down to a simmer. Let simmer (I do it covered) for about 2 1/2 hours, then fish out the drumsticks. Remove all the skin and bones, shred the meat, and return it to the pot. Then add the tomato paste to thicken the broth.
