Asian Essence Brown Sugar Meatloaf

1 lb 93% lean ground beef1/2 C Scallions, chopped1/2 C Egg Substitute1/4 tsp Ground Ginger10 Saltine Crackers, crushedSalt & Pepper to taste1/2 C. Light Brown Sugar1/2 C. Ketchup
Grease a 5x9 loaf pan with cooking spray.
Preheat oven to 350.
Cover the bottom of the pan with light brown sugar. Layer the ketchup on top of the sugar.
Combine 1st 6 ingredients together thoroughly. Shape into a loaf and place on top of the ketchup/sugar mixture.
Cook at 350 for 1 hour.
Cut into 6 equal slices. Serving size one slice.
