Cuban Garbanzo Bean Salad

2 (15 ounce )cans of garbanzo beans, drained1 green bell pepper, chopped1 red bell pepper, chopped1 cup of diced sweet yellow onion1 cup of cherry or grape tomatoes1/4 cup of freshly squeezed lime juice1/4 cup of extra virgin olive oil1 tsp. of ground cumin1/2 tsp. of sea salt1/2 tsp. of black pepper3 minced garlic cloves 10 black olives1/2 cup chopped parsley
This garbanzo salad is a MAIN MEAL.
This meal/salad is hearty, healthy and very filling. Great to prepare when not in the mood to cook ! My Cuban grandma would make this salad on a hot summer day as well as when in a rush ! easy and delicious !

Combine the red and green peppers, onion, tomatoes, olives, garbanzo beans and chopped parsley in a non-metallic large salad bowl.
Combine in a blender the lime juice, olive oil, minced garlic, cumin, salt and pepper. Pour the dressing over the garbanzo bean mixture. Cover and refrigerate for an hour or so.
Serves 6

i added a full cup of parsley to my mix and also some cubed extra firm tofu. this is a very filling salad, but a little high in caloric content. i think the tofu expands the protein value while decreasing the overall calorie load. adding a high value carbohydrate as a side makes this a complete meal - 7/3/10
