8 oz zucchini (1 medium size)7 oz summer squash (1 medium size)2/3 cup Parmesan cheese1 egg, beatensalt and pepper to taste1/2 cup oil for frying
Shred squash and then toss in a bowl with a beaten egg and 2/3 cup of Parmesan cheese. Heat oil in pan on medium high heat. Form squash patties, 3 at a time, and gently place in oil for 3 minutes per side.
