Curried Lentils and Potatoes

1 cup dried lentils1/4-1/2 teaspoons red pepper flakes4 cups water2 T butter1 lg onion coarsely chopped2 T curry powder15 oz can tomatoes4 cups peeled & coarsely chopped poatoes1 t salt1/2 T honey
Place lentils, red pepper flakes, and water in lg pot. Bring to boil over high heat then reduce to simmer for 20 min.
While lentils simmer, chop onion and potatoes. Set potatoes aside. Heat butter in skillet, add onions and curry powder and saute approx 2-3 min. Set aside until lentils finished.
Scrape onion & curry mixture into pot of lentils, add remaining ingredients. Stir until evenly combined. Simmer uncovered 15-20 min, or until potatoes are tender.
