Five Spice Baked Oatmeal (vegan, high protein, high fiber)

1/4 cup rolled oats2 tbsp fiber one original cereal1/4 cup canned pure pumpkin1/4 cup water2 tbsp vanilla rice protein powder (I use Sun Warrior)1/2 tsp Chinese Five Spice seasoning1/2 tsp vanilla extract1/2 tsp truvia or stevia natural sweetener
Preheat toaster/oven to 375F.
Spray a mini loaf pan with nonstick spray.
In a small bowl combine oats, cereal, seasoning, stevia, and protein powder. Stir in pumpkin and water and then mix in vanilla.
Bake for 20 minutes and then broil for an additional 3 (to form a crispy crust). Let cool a little bit before serving. Enjoy!
