Spinach Egg bake

Ingredients
10 oz fresh spinach coarse chopped2 large eggs1/4 c mushrooms finely chopped1 Tbsp onion finely chopped1 Tbsp Veggie shreds (cheese food alternative)1/4 Sour Supreme (non dairy imitation sour cream)
Directions
Heat oven to 350
spray baking pan
mix spinach, onion and beaten egg together pour into pan
spread Sour Supreme over spinach egg mix
mix mushrooms and veggie shreds sprinkle over top
Bake for 15-20 minutes
