Ingredients
1 large sweet onion-small dice2 large cucumbers, peeled and small diced5 large tomatos, small diced1 cup loosely packed fresh mint- minced finely4 oz fresh squeezed lime juice4 tbls(3oz) EVOO(extra virgin olive oil)2 teas salt and 2 teas pepper
Directions
IN a large bowl mix onion through mint throughly. In a smaller bowl mix lime juice, oil, salt and pepper. Whisk until oil is no longer seperated from juice. Pout over veggies and toss to coat. YUMMY!

    in my arabic family we eat this all the time. usually with parsley and lemon instead of mint and lime but either way is great! i also go easy on the salt and pepper. - 2/7/08

    This is one of my favorite salads. I get it every time we go out for Persian food. It works best if you use roma tomatoes and the smaller cucumbers. I think the cucumbers are Persian or Italian but I'm not sure what type they are. Both have more flesh and less seeds. - 1/26/08
