Banana & Applesauce Oat Bran Muffins

Ingredients
1 cup all-purpose flour1 cup oat bran3/4 cup whole wheat flour1 tbsp cinnamon1 tsp nutmeg2 tsp baking powder1 tsp baking soda2 eggs1 1/2 cups overripe mashed banana (3 small)1/2 cup dark brown sugar (can use as little as 1/8 cup depending on the sweetness of the bananas)1/4 cup canola oil1 1/2 tsp vanilla extract1 tsp Frontier All Natural Maple flavoring1/2 cup chopped pecans
Directions
In a large bowl, combine the first eight ingredients with a whisk. In another bowl, beat the eggs, sugars, banana, applesauce, oil and nuts. Stir into the dry ingredients just until moistened. Let sit for at least 10 so that the bran soaks in the moisture. Fill 12 greased or paper-lined muffin cups almost to the top rim or 24 standard muffin cups a scant two-thirds full. Bake at 375 degrees F for 15-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.
