Carrot Coconut Soup

Ingredients
2 tablesppons canola oil2 red onions slices2 Tablespoons giner root8 carrots chopped6 cups chicken broth low sodium.5 tsp salt.25 tsp pepper6 sprigs cilantro
Directions
makes 6 11/2 coup servings.

heat 2 tablespoons canola oil. Add red onions sliced and gingeroot for 5 minutes until soft. Add coriander until feragrant. Add onion mixture to crockpot. Add carrots, cilantro, chicken broth, salt and pepper over high for 4-5 hours or low heat for 8-10 hours. Then blend soup in patches in blender. Stir in coconut milk and warm for another 30 minutes. Serve with cilantro garnish
