Broccoli Pesto Frittata

1/4 cup chopped onions2 Tbsp butter spread8 large eggs, beaten1/4 cup milk1 Tbsp pestodash of sea saltdash of nutmeg2 Tbsp chopped black olives4 slices deli ham, chopped1/2 Tbsp minced garlic2 tsp dijon mustard1 cup shredded cheddar1 head of broccoli florets, roughly chopped
In oven safe pan, sautee onions, garlic and ham in butter spread. Once browned, add broccoli and cover. Cook just a few minutes until bright green; remove immediately from heat so broccoli does not over cook (broccoli will finish cooking in oven).
Beat eggs with pesto, salt, olives, milk and mustard. Pour over broccoli mixture. Sprinkle with cheddar. Bake at 375 for 25 minutes or until middle is set.
