Parmesean Spinach Cakes (From Budget Savvy Diva)

Ingredients
12 ounces Frozen Spinach (after you defrost and drain/squeeze well)1/2 c. low-fat cottage cheese3/4 c. finely shredded Parmesan cheese3 eggs, beaten1 clove garlic, minced1/4 tsp. salt1/4 tsp. pepper1/4 tsp. onion powder1/4 tsp. garlic powder
Directions
1. Preheat oven to 400
2. Mix all ingredients in a bowl, except for 1/4 c. Parmesan cheese, mix well
3. Divide the mixture into 6 muffins pan cups that are well greased
4. Bake for 15-20 minutes
5. Wait 5 minutes then remove from muffin pan - sprinkle with the rest of the cheese

    These are delicious and very easy to make! I used fat-free cottage cheese and didn't have any issues with them holding together. Definitely making them again. - 5/14/12
