Balsamic Vegetable Medley

Ingredients
1 red pepper, sliced1 yellow pepper, sliced2 stalk celery, chopped1 small zucchini cut into bite size pieces1 red onion, sliced3-4 cloves garlic, minced1/4 cup balsamic vinegarblack pepper to tastedried basil to taste
Directions
Sauté peppers, celery and zucchini until tender, about 10-15 minutes.
Meanwhile sauté the onion, garlic, and seasonings in the vinegar.
Stir the cooked vegetables into the vinegar mixture until thoroughly coated. Serve.

    I used whatever veggies I had on hand (green pepper, celery, onions, mushrooms) and added freshly grated ginger as well. Yummy!! My kids even liked it! Used the leftovers the next day in a sun-dried tomato wrap for lunch. Yummy again! - 6/2/10

    Great dish! I wasn't that excited while cooking it but it came out great. I would use a little less balsamic vinegar because it was a little overpowering for my tastes but overall it was a delicious dish - it was even better heated up the next day. I will make this agian :) - 6/10/09
