Low-Fat Fettucine Alfredo

Ingredients
1 tbsp butter 2 cloves garlic, minced 1 tbsp all-purpose flour 1 1/2 cups fat-free milk 1 cup shredded Parmesan cheese 4 oz. reduced-fat cream cheese 1 box dry fettuccine pastaSalt and pepper to taste
Directions
Melt butter in saucepan. Add garlic and cook for 1 minute. Stir in flour to make a paste. Stir in milk. Stir in Parmesan cheese. Add cream cheese. Cook until thick and creamy. Adjust milk as necessary. Season to taste with salt and pepper. Cook fettuccine noodles while making sauce. Drain noodles and add sauce. Sprinkle additional Parmesan cheese on top of each individual serving.

    Thanks for the recipe, this was delicious! Used 2T of butter and substituted sour cream for cream cheese because that's what was on hand. Served with chicken. That's a keeper!!! - 3/4/09

    wow-made this for my son's birthday request and all family members asked for it again. I would add a bit of parsley next time and maybe a teeny bit more butter. I added extra garlic as our family loves garlic and lots of pepper. Definitely do again. - 12/30/08
