Sour Cream Enchiladas

Ingredients
• 2 cups sour cream• 1 can cream of chicken• 1 tbsp. chopped cilantro• 2 1/2 cups cooked, shredded chicken• 1 can Mexican Rotel• 1 cup onion, chopped• 16 flour tortillas, 10" diameter• 1 cup cheese• 1 can diced green chiles
Directions
1. Mix sour cream, soup, and cilantro in sauce pan. Heat through.
2. Combine chicken, Rotel, onion, and green chiles in pan. Heat until onion is transparent.
3. Warm tortillas until flexible. Fill each with 2 tbsp. chicken mix and 1 tbsp. of cheese. Roll and place in dish.
4. Pour over sour cream sauce. Top with cheese.
5. Bake at 350° for 30 minutes.

Serving Size: 9x13 dish makes 12 servings
