Salmon poached in White Wine with Wilted Spinach

Ingredients
1 pound of salmon fillets3 T Brummel and Brown spread2.8 oz (1/2 of a small bottle) of Gallo Chardonnnay white wineJuice of 2 or 3 lemons to tastePaprikaSpinach (prewashed from bag)
Directions
In a large teflon skillet with a cover, heat the Brummel and Brown on Medium and melt it, swishing it around to coat the bottom of the pan. Add the salmon, putting the pink side down in the "butter", then turning over and placing skin side down. Sprinkle with paprika. Pour white wine over the fish and lemon juice to taste. Cover and reduce heat to low. Simmer 15 minutes until salmon is flaky and almost done (depending on the thickness of the fillets). With about 5 minutes left, open cover and place spinach all around and on top of the fish. Re-cover and cook an additional five to ten minutes until spinach wilts.
