Grecian Quinoa Salad

Ingredients
1 C. uncooked quinoa, rinsed well1 C. vegetable broth, plus 1 C. water1/2 large cucumber, seeded and small diced1/2 large red bell pepper, tiny diced1 C. packed spinach, rough choppedjuice of 1 small lemon1 Tbsp olive oiltwo dashes oregano1/4 C. Fat-Free Crumbled Feta Cheesesalt and pepper to taste
Directions
Cook quinoa in water/vegetable broth, about 10-15 minutes until translucent. Cool.
In the meantime, wash and prep the vegetables.
Mix all ingredients, saving the cheese til last and gently fold in.
