8 Endives (chicons) fresh with outer leaves removed.8 slices of braised york ham 250 mls bechamel sauce75 grams grated cheeseKnob of butter
Steam braise the chicons in a covered saucepan with a little butter and a stablespoon full of water, add water but only to keep moist during the 30 mins cooking period.
Drain the chicons and then allow to cool. When tepid squeese out all excess liquid. You can use a clean kitchen towel or kitchen paper.
Wrap the chicons in ham and place in a buttered oven dish. Pour over the bechamel sauce and then sprinkle with the cheese. Cook in the oven at 180 C for 20 minutes and then place under grill to gratiné the cheese. Can be served with mashed potatoes.
