Ingredients

    1/2 cup 100% apple juice
    1 cinnamon stick
    3 large Golden Delicious apples, skin on, diced
    2 cups non-fat plain yogurt
    1 tbsp vanilla

Directions

Combine apple juice and cinnamon stick in a small, deep pot and bring to a boil.
Add apple pieces and cook 10 minutes. Drain apples, reserving 2 tbsp juice. Remove cinnamon stick and discard.
Reserve one cup of the drained apples, and put the rest into blender with the saved juice, one cup of the yogurt and vanilla.
Pulse until mostly pureed. Remove to a bowl and mix in remaining apples and yogurt.

    This recipe is very simple. I used 2 cinnamon sticks and 3/4c apple juice. It turned out really well. I actually added a little more of the drained apple juice to the finished product for additional flavor. All in all it is a very unique recipe - perfect for a simple, guilt - free tasty treat. - 1/18/09

    YUM! I just made this, but I didn't drain the juice. I put it in the freezer, and kept going back to scrape the sides every 1/2 hour. When it was ice cream consistency, I served it. It tasted like apple pie with ice cream... but guilt free! Thanks! - 9/28/08
