Quick Curried Lentil Soup

Ingredients
1 1/2 Cups - Red Lentils1 1/2 Cups - Green Lentils2 teaspoons Morton Lite Salt Mixture3 1/2 - T. minced dried onion1 tsp. - garlic powder1 T - Curry Powder (or more depending on taste)1/2 Cup - dried apple rings cut into small pieces1 or 2 T - dried parsley7 to 11 cups of water1 small can (5.78 oz) coconut milk (optional)
Directions
Put everything in a soup pot, except for the coconut milk if you are using it, and bring to a boil. Reduced heat to low, cover and simmer the soup for 20 to 30 minutes, stirring occasionally. When lentils are cooked, stir in the coconut milk and turn off the heat. Makes 8 - 1 cup servings.
