Basil yogurt spread:Put the Low-fat Greek yogurt, Dijon mustard, basil leaves, garlic and sea-salt and black pepper in a bowl and mix until well blended.-------------------------------------------------------------------1/2 cup low-fat Greek yogurt1 Tbsp (15 ml) Dijon mustard1 handful basil leaves1 clove garlic1/4 tsp (1/25 ml) each sea salt and black pepper4 large portobello mushrooms4 whole-grain sandwich bun/rolls2 cups (480 ml) spinach2 tomatoes, thinly sliced
Heat a grill or grill pan (I use a George Foreman grill) with cooking spray. Rub the mushroom with the olive oil and season with salt and pepper. Cook on each side for approx.5 minutes.
Spread both sides of the whole wheat bun with the Basil Yogurt Spread and add spinach, portobello mushroom and tomato slices.
