1/4 cup butter 5 tablespoons all pupose flour1 cup button mushrooms 1 scallion2 cups chicken broth2 cups non fat milk1 cup nonfat cream cheese4 teaspoons ground nutmet1/2 teasoon kosher salt1 teaspoon black peper 1 10 oz box frozen spinach1/4 cup parmesan cheese
This makes 8 one cup serviings.
Melt butter in a large oup pot over medium head. Ass the four adn whisk until brown. add mushrooms and scallions and saute until tender. Whisk in chicken brother adn milk and stir until thick 5-10 mintutes. add cream cheese swiss cheese adn nutmed sald adn pepper and stir until cheese is melted. add the spinch and stir. simmer the soup for 0 to 15 minutes. garnich with parmesan cheese.
