Brown Rice w/sauteed veggies, lentils and black beans

Ingredients
Brown ricecarrotsred bell peppersonionsmushroomsgarliccanned diced tomatoesspinacholive oilkosher saltred peppers flakeslentilsblack beans
Directions
Heat 2 tablespoons olive oil in skillet.
Sautee the carrots first, they take the longest. Add onions, red bell peppers, mushrooms and sautee til done. Add kosher salt, red pepper flakes, garlic and dried lentils. Add half the can of diced tomatoes with the juice. Simmer lentils are cooked, about 20-25 minutes. Add black beans and spinach, allow to wilt into the juices then serve over brown rice.
