Personal Buffalo Chicken Pizza

Ingredients
1 Whole Wheat, High Fiber, Low Carb TortillaCooking spray2 Laughing Cow Light Blue Cheese wedges3 ounces chopped cooked chicken breast1 tsp Frank's hot sauce (or any other zero calorie hot sauce)½ cup petite carrots, raw½ cup celery, raw
Directions
Lightly spray tortilla with cooking spray and bake in 375 degree oven for about 5 minutes, until it begins to crisp.

Microwave cheese wedges in bowl for about 20 seconds. Stir in chicken and hot sauce until chicken is well coated.

Dice carrots and celery and mix together.

Remove tortilla from oven, flip over. Top with half the carrot and celery mixture.

Top with chicken mixture.

Top with remaining carrot and celery. Drizzle a little more hot sauce to taste.

Bake at 375 for about 8 minutes, until outer edge is browned. Carefully remove onto cutting board and slice into six pieces.

    Just made this for lunch today and can't believe how good it was! I was doubtful at first about celery and carrots on a pizza, but with the chicken, blue cheese and hot sauce, it really works. Thanks for sharing it. - 5/1/12
