Breakfast Omelet

Ingredients
3 Eggs1 Tb chopped onion1 Tb chopped parsley3 cherry tomatoes, chopped2 Large mushrooms, choppedSpinach (1-2 handfuls)1 Tb blue cheese
Directions
Chop all vegetables (except spinach) and set aside. Beat 3 medium-large eggs in a separate bowl. Put chopped vegetables (except spinach) in a small saute pan. At the same time, pour eggs into a large 8 inch skillet. When the eggs are firm on the top, add all vegetables, including the spinach. Sprinkle blue cheese crumbles on top of the vegetables and then flip the eggs in half. Let cook until the eggs are firm and puffy.
