Super easy chicken corn chowder

2 Cups fat-free, low-sodium chicken broth2 medium red potatoes, washed and cubed1 small can yellow sweet corn, drained2 cups unsweetened almond milk12 slices pre-cooked turkey bacon, cut into pieces1 1/2 Cups cut-up chicken piecesSalt & pepper to taste
Add chicken broth and potatoes to a pot and bring to a boil.
Simmer until potatoes are tender.
Add corn and almond milk
Using stick/immersion blender, briefly puree potatoes and corn until desired texture is reached.
Add bacon and chicken.
Continue over medium heat to thicken soup slightly and heat meat through.
Serve as desired.
Serving Size: Makes 4 to 5 2-cup servings
