Ingredients
1 Low Carb Tortilla1/4 Cup Black Beans1 TBSP Cream Cheese2 TBSP Pea Guacamole1 TBSP Non-Fat Greek Yogurt2 TBSP (or more) Soy Meat Crumbles1 TBSP Diced OnionNon-stick cooking sprayFeel free to add any other ingredients you'd like to. I like to add corn, spinach, tomatoes
Directions
Saute onions, and anything else you'd like to add, with the soy meat crumbles.

Put together burrito. Start with the tortilla, then layer on cream cheese, pea guacamole, smashed black beans, yogurt and soy meat crumble mix.

Then fold tortilla like a burrito. Spray with non-stick spray and place on a hot skillet seam down. Cook until tortilla becomes crisp, then flip and do the same thing on the other side.
