Bitter Melon

Ingredients
2 Cups - Bitter Melon/Bitter Gourd, skin removed, sliced horizontally1/2 Cup - Onions, Sliced 2/3 Cup - Stewed Tomatoes2 Tbsp - Olive Oil,1 Tsp - Salt,1/8 Tsp - Cayenne Pepper1/2 Tsp - Mango Powder (Amchoor) - at Indian Stores1/2 Tsp - Coriander Powder (Dhania Powder) Indian StoreMedium Pan with a lid.
Directions
Heat oil in pan over medium heat, saute bitter melon slices for 5 minutes or till they start browning slightly. Add the onion slices and saute together till onions start becoming soft.
Add the stewed tomatoes and the dry ingredients. Cover and simmer on medium-low heat till the bitter melon is soft and there is no liquid from the tomatoes remaining in the pan.
Serve hot.
