Ingredients
Directions
*Swanson Natural Goodness Chicken Broth, 4 cup (2 cans)Egg, fresh, 2 large whisked until 'scrambled' *Kikkoman Lite Soy Sauce, (or another low sodium soy sauce) .33 tbsp (1tsp)Sherry, dry, 1 fl. oz (2 tsp cooking sherry)Sesame Oil, .25 1tsp (not too much but you ca add more if you like)green onions for garnish, 1-2 should work nicely.
It takes maybe 5-10 minutes to make this. Just bring your chicken broth to a boil in a pot over medium to high heat. Add 1/4 tsp seasame oil (i use the hot kind you can use regular if you prefer), 2 tsp cooking sherry, and 1tsp low sodium soy sauce, to taste. (the better tasting broth you use the better flavor the soup will have). (you can add these while bringing to a boil).
When the soup is boiling (not a rolling boil it just has to be reasonably hot enough to cook the egg quickly), pour the whisked egg mixture into the soup stiring constantly while pouring. To avoid making 'balls' of egg i use a zigzag motion while stirring/pouring.
Garnish with green onion (optional but i love it that way).
Easy, quick, low in calories yet surprisingly filling and satisfying. This makes 2 dinner sized portions, but you could make it into 4 smaller appetizer portions in smaller bowls.
