Black Bean Sweet Potato Burger

Ingredients
15 oz Black Beans, drained and rinsed3 c Cubed sweet potato cooked (skin on or off)1/2 c Frozen or fresh corn2/3 c finely chopped onion2 Large garlic cloves finely ninced1/2 c Cooked quinoa1/2 c Rolled oats, partially groundsaltblack peppercuminoreganocayenne pepperchili powder
Directions
Roast cubed sweet potato in oven for 45-60 min. Smash with potato smasher. Prepare Quinoa as instructions call for. Smash half of beans. Dice onions finely. Grind up oats in food processor for a minute. Add whatever seasonings you want: I use cumin, onion powder, garlic powder, fresh garlic, cayanne pepper, oregeno, chili powder, salt and pepper. Mix all ingredients together in a bowl after sweet potatoes and quinoa are prepared. Pat out burgers and bake in parchment paper in the oven for 15 minutes per side.
