Ingredients:-Onions, raw, 3 small -Red Ripe Tomatoes, 4 medium whole(remove)-Courgette-Yellow Peppers -Mushrooms-sweet potatoeOlive Oil, 1 tbsp fresh chopped herbs (parsley/chives/basil)Sprig of rosemary&thyme
Directions
-Roughly chop onions and yellow pepper into segments tomatoes in half & Courgettes&yams into thick slices(inch thick).
-Toss in chopped herbs and olive oil in oven proof dish
-add sprig of rosemary&thyme (remove before serving)
