Black Eyed Pea and Peppers Salad

Ingredients
2 tablespoons extra virgin olive oil2 tablespoons red wine vinegar2 cloves garlic, finely chopped1 teaspoon mustard1 Anaheim or jalapeņo, stemmed, seeded and finely chopped1 teaspoon dried oregano3 (15-ounce) cans black-eyed peas, rinsed and drained1 (4-ounce) jar pimento peppers, drained1 yellow or orange bell pepper, cored, seeded and chopped1 cup sliced green onions1/2 red onion, diced2 ribs celery, chopped1 teaspoon hot sauce1/2 teaspoon saltGround black pepper to taste
Directions
Mix oil, vinegar, garlic, mustard and oregano in a measuring cup. Whisk to incorporate. Place all other ingredients in a large bowl. Dress with vinegrette.
